If you wish to have color all over the fish, then remove the skin. (It will be easier to cut the fish with the skin.)
Mix the salt, berry powder and sugar together.
Sprinkle the mixture all over the fish.
Wrap the fish with wax paper and place in the fridge. Turn sides from time to time.
Cut the fish into thin slices and serve
Whitefish will be ready sooner than salmon. Use salt moderately. Sugar makes the fish softer whereas with only salt it can become stiff.
While the salt is gradually going into the fish, there will be some liquid coming out. Therefore it is suggested using a plastic bag or place the fish in a dish with some sides.
