These crisp oat cookies, enhanced with the natural goodness of nettle and wild blueberry, are perfect for tea breaks or as a light treat. Add a decadent raspberry filling for a sandwich-style twist!

Nettle-bilberry oat crisps with raspberry filling

Ingredients

  • 50 g margarine or coconut oil
  • 2 dl oats
  • 1 tbsp all-purpose flour or almond flour
  • 1 tbsp Natural Nordic nettle-bilberry powder

  • 1 tsp baking powder
  • 1 dl sugar
  • 1 egg

Directions

  1. Preheat the oven to 200°C.

  2. Melt margarine in a pot. Add remaining ingredients and mix into a smooth dough.
  3. Drop small spoonfuls of dough onto a baking sheet, leaving 10 cm gaps between cookies.
  4. Bake for 5 minutes on the upper rack. Cool slightly before removing from the sheet.
