These delicate oat crisps are a traditional Finnish treat, made with rolled oats and enriched with a hint of nettle and bilberry powder for a natural Nordic twist. Light, crisp, and quick to bake — perfect with coffee, tea, or as a crunchy snack.

Ingredients

50g butter
- 70g oats
- 1 tbsp wheat flour
- 1 tbsp Natural Nordic nettle-bilberry powder
- 1 tsp baking powder
- 70g cane sugar
- 1 egg
Directions
Preheat the oven to 200°C (392°F).
- Melt the butter in a saucepan.
- Add all remaining ingredients to the melted butter and mix with a wooden spoon.
- Drop small spoonfuls of the dough onto a baking sheet lined with parchment paper, using two spoons. Leave plenty of space between each (about 10 cm), as they will spread.
- Bake on the upper rack for about 5 minutes, until golden around the edges.
- Let cool slightly before lifting from the paper with a spatula.
