Ingredients
- 175g vegan butter
- 150g cane sugar
- 1 egg replacement
- 300g whole wheat flour
For different dough flavors:
Directions
Cream the vegan butter and cane sugar together until fluffy.
- Gradually add the egg replacement mixture, beating well after each addition.
- Sift in the flour and mix until a soft dough forms.
- Divide the dough into separate portions, one for each flavor you want to make. For four flavors, add a slightly less than 1 tbsp of each powder to each portion.
- Roll each flavored dough into a 1 cm thick rectangle on a floured surface.
- Layer two differently flavored doughs on top of each other and roll tightly into a log, using parchment paper to help.
- Chill the logs in the refrigerator for about 1 hour.
- Preheat the oven to 190°C (375°F).
- Slice the logs into rounds, about 35-40 cookies if making two flavors.
- Bake on a lined baking sheet for 10-12 minutes, or until the tops are golden brown.
- Transfer to a wire rack to cool completely before serving.
