Ingredients
- 350g whole wheat flour
- 150g cane sugar
- 2 tsp vanilla sugar
- Zest of 1/2 lemon, grated
- 100g almond powder/flour
- 250g butter
- 1 egg
- Filling and Decoration:

50g of Natural Nordic cranberry powder
-
(or 50g of any other Natural Nordic berry powder)
- 25g of jam sugar or powder sugar
- water
Cookies:
Jam for filling:
Directions
Combine the flour, sugar, vanilla sugar, grated lemon zest, and almond powder on a work surface into a mound.
- Add the thinly sliced cold butter and the egg.
- Chop all the ingredients with a large knife.
- Quickly knead the chopped ingredients into a dough by hand.
- Wrap the dough in plastic wrap and refrigerate for 2 hours.
- Preheat the oven to 180°C.
- Roll out the dough on a floured surface to approximately 2mm thickness.
- Using 2-3 different sizes of the same cookie cutter, cut out cookies, the same amount of each size.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for about 10 minutes until the cookies are golden yellow.
Remove the cookies from the baking sheet. Let the cookies rest and cool properly.
- Meanwhile make the jam for the filling by mixing berry powder and sugar. Add water a little at a time and mix until you get the right consistency for the jam.
- Assemble tower-like stacks of cookies by sandwiching them together with jam: place the largest cookie at the bottom and the smallest one on top.
Recipe Note
For neater cookies, fill the bottoms of the cookies with jam. This will keep the edges of the cookies tidy. Decorate with berry powder or berry sugar (mixture of berry powder and powder sugar) if desired.
