A nostalgic Finnish pie made with a buttery oat crust and topped with tangy lingonberries and creamy sour cream. Simple, rustic, and comforting — just like grandma used to make. Instead of fresh berries you can use Natural Nordic lingonberry powder.

Ingredients
Base
- 150g butter
- 35g cane sugar
- 1 egg
- 130g oat flour
- 70g oats
- 1 tsp baking powder
Topping
- 2 dl sour cream
- 1 egg (optional)
- 400 g lingonberries or 4 tbsp Natural Nordic lingonberry powder
Directions
Preheat the oven to 200°C (392°F).
- Cream the butter and sugar together. Add the egg.
- Mix in flour, oats, and baking powder until a soft dough forms.
- Press the dough evenly into a pie dish.
- Mix sour cream and egg (if using), and gently fold in the lingonberries or lingonberry powder.
- Pour the mixture over the base.
- Bake for about 30 minutes, or until the top is set and lightly golden.
- Serve warm or cold — perfect just as it is!
