Ingredients
- 70g oats
- 130g wholewheat flour
- 1 tbsp Natural Nordic Wild Power powder
- 100g butter
- 0.5 dl water
- 150g feta cheese
- 200g cherry tomatoes
- 2 tbsp Natural Nordic nettle powder
- 1 tbsp Natural Nordic Wild Power powder
- 100g baby spinach leaves
- 3 spring onions
- 1 tbsp butter
- 2 dl plant-based milk
- 2 eggs
- salt and pepper to taste

Directions
- Mix oats, flour, and Wild Power powder in a bowl.
- Blend in butter until crumbly.
- Add water, stirring into a smooth dough. Roll out the dough on a well-floured surface, and transfer the dough to a round pie pan.
- Press the dough firmly against the edges of the pan and trim off any excess dough. Place the pie crust in the refrigerator and let it rest.
- Preheat the oven to 200℃.
- Sauté chopped spring onions in butter.
- Add spinach, and simmer until water evaporates. Cool and stir in Wild Power and nettle powders.
- Crumble feta and cut the cherry tomatoes in half.
- Whisk eggs, plant-based milk, salt, and pepper in a bowl.
- Pour the excess liquid from the spinach mixture into the egg-milk mixture.
- Take the pie crust from the refrigerator. Prick chilled pie crust; bake in the oven for 10 minutes.
- Spread the Wild Power mixture and feta cheese evenly on the bottom of the pie. Mix the egg-milk mixture again and pour it on the pie.
- Place the cherry tomato halves on top of the pie.
- Bake for 40-50 minutes or until set and nicely browned.
- Cool for 15-20 minutes.
- Slice and serve the Wild Power, tomato and feta pie. Enjoy!
