A light and creamy Finnish bilberry pie with a gluten-free crust and tangy yogurt-quark filling. Packed with forest berries' flavor, it’s a perfect Nordic treat for summer and beyond.

Ingredients
Crust
- 125g butter
- 35g cane sugar
- 1 egg
- 165g gluten-free flour mix
- 65g almond flour
- 1 tsp baking powder
Filling
- 5 dl fresh bilberries or 5 tbsp Natural Nordic bilberry powder
- 2 dl natural yogurt
- 2 dl quark (or thick yogurt if unavailable)
- 1 egg (optional)
- ½ dl sugar
Directions
Preheat the oven to 175°C (347°F).
- Whip the butter and sugar until light and fluffy.
- Add the egg and mix well.
- Combine the dry ingredients and fold them into the mixture.
- Press the dough into a greased round pie dish (approx. 27 cm diameter), including the sides.
- In a separate bowl, mix yogurt, quark, (egg), and sugar. Gently fold in the bilberries.
- Pour the filling over the crust.
- Bake for about 30 minutes until set and lightly golden.
- Let cool before serving. Enjoy warm or chilled!
