Reindeer tart with yarrow

We used our classic mushroom tart recipe as a base and simply replaced the mushrooms with reindeer. It worked perfectly — rich, tasty, Nordic, and surprisingly easy.

Ingredients

1 ready-made pie crust (or your favorite savory tart dough)

200–300g reindeer

1 small onion, finely chopped

1–2 garlic cloves, minced

150g grated cheese (optional)

200 ml crème fraîche

2 eggs

black pepper
-
fresh herbs, we used dried herb - 2 teaspoons of Natural Nordic yarrow
Directions
Preheat the oven to 200°C.
Sauté onion and garlic in a pan. Add the reindeer and cook briefly. Season with black pepper.
Place the crust in a tart pan and pre-bake for about 10 minutes if needed.
Spread the reindeer mixture over the base.
Whisk together eggs and crème fraîche. Stir in cheese (if using).
Pour the mixture over the filling.
Bake for 25–30 minutes until golden and set.
Let cool slightly before serving.
Recipe Note
If you prefer a less salty version, choose a milder cheese or leave it out and add a little extra crème fraîche instead.
